Tasty Treats - Bread Machine Banana Bread With Olive Oil!

Most people think bread machines are just for making white or whole wheat bread but did you know you can also make a delicious banana loaf using your bread machine. With simple ingredients and optional chopped walnuts or macadamia nuts, your bread machine will do the rest. No need for additional mixing by hand as your bread machine will do all the mixing (and baking) for you.

It doesn't matter which ingredient goes in the bread pan first, although I do recommend you put the vegetable oil and eggs in first, followed by the mashed bananas and sour cream and then the flour, salt and sugar. On your machine, choose 'Quick Bread' (or 'Cake') cycle. Once the mixing cycle has started, the bread machine will mix all the ingredients thoroughly within a couple of minutes. I also recommend having a plastic or wooden spoon to gently push down the flour at the sides and corners of the bread pan in the first few seconds after the mixing cycle has started so that all the flour gets mixed in.

The first thing you'll need are two ripe bananas. They should be ripe enough to easily mash with a fork.

Let's get started!


2 bananas - overripe 

2 cups unbleached all-purpose white flour

1/2 cup vegetable oil

2 large eggs

1/4 cup sour cream

2/3 cup light or brown sugar

1/3 cup white sugar

1 tsp vanilla extract

1/2 tsp salt

1 tsp baking soda

1/2 tsp baking powder

Optional - 1/2 cup chopped walnuts OR chopped macadamia nuts

Peel the two bananas and chop into smaller pieces in a bowl and mash with a fork. Once mashed, the mix can be added to the bread pan.

For this case, the vegetable oil I used is organic extra virgin olive oil, along with organic all-purpose flour and Himalayan pink salt. As mentioned earlier, you can place the ingredients in the bread pan in any order you like but don't add the nuts just yet. Your bread machine will cycle 15 / 20 minutes and will start beeping. When it beeps, this will be your cue to add the chopped nuts (optional). In this case, I chopped some walnuts.

Once all your ingredients have been placed in the bread pan, choose the 'quick bread' (or 'Cake') cycle. The bead machine should start cycling almost immediately. Use a plastic or wooden spoon to carefully push down any flour caught at the sides or corners so that all ingredients blend well. After just a couple of minutes, your mix should look like this...

After about 15 minutes, your bread machine will beep, signalling it's time to add the chopped nuts. Once you've added the nuts, you can walk away and let the bread machine do the rest of the work and about an hour and 45 minutes later, your banana bread will be baked and ready to place on your bread board. Let cool for about 20 minutes to half an hour.


I let my bread sit inside the bread machine an additional ten minutes after it beeped to let it bake some more in its own heat as I like a thick crust on my banana bread. You don't have to do this, of course.

Doesn't that look tasty? Enjoy a slice on its own or with vanilla ice cream. A slice of banana bread in the morning with your coffee or with a cup of tea in the evening is a great way to start or end your end. To preserve your loaf, cover with plastic wrap or aluminum foil and place in the refrigerator. You can also freeze your bread but try to consume within a month of freezing.

You can take a slice from the refrigerator and warm up in the microwave oven for about 25 seconds and then place a thin strip of butter over your warm slice of banana bread. 

The quantities of the ingredients can be adjusted to your liking. The original recipe called for 1/3 cup light and 1/3 cup dark brown sugars and in this case, I substituted all the sugars in the recipe with 1 cup light brown sugar.
