Chicken and tomato sauce!

Hello! Today I made an easy and very simple recipe to make quite quickly that can be taken alone as a dish, or also with some other companion such as rice, quinoa, pasta or dipping with bread. That depends on your own choice.

At the moment you will only need:
- 1 large jar of crushed tomato, or you can crush it yourself if you prefer and feel like it. For two people about 800 gr.
- 1 can of roasted red pepper, it usually comes in strips or pieces, you can also roast it and put it in oil.
- 2 chicken breasts, it depends on the size and how hungry you are.
- Much garlic! Several cloves of garlic also depends on your taste for this food.
- And extra virgin olive oil and sea salt (I prefer this type of salt because it has more nutrients than the refined one).

***The amounts are indicative, I don't measure them much either, but more or less they are these but they can be adapted.

 

How to prepare it:
- As simple as chopping the chicken, putting it in a pan or pot to fry with olive oil until it is completely browned. And reserve it.
- On the other hand, in a pot, add more olive oil and add the garlic until they begin to brown.
- Now all the tomato is added over low heat, let it cook and add a good pinch of salt to taste. When it starts to bubble, add all the red pepper and leave it for only a few minutes, until the liquid evaporates a little more, and finally at the last moment the chicken is added, it is given a few turns and that's it.

 

What is the best thing about this recipe?
In addition to being easy to do and combinable as I have said, its benefits must be taken into account:
- We have lean protein from chicken.
- Benefits for the immune system that garlic provides us.
- Cardiovascular benefits of extra virgin olive oil.
- Benefits of sea salt, which, as I have mentioned, contains more nutrients and trace elements than the classic refined salt, which really only adds flavor.
- Vitamins and antioxidants of the red pepper, and also of the tomato. But the tomato, especially cooked, gives us a lot of lycopene, and I say cooked because with the reaction of the heat, the effects of the lycopene are further enhanced.

 

And what is lycopene?

It is a natural component, a carotenoid that gives that red color to some foods such as tomatoes, red peppers or fruits such as watermelon (but no strawberries for example). But tomato sauce is possibly one of the foods with the most quantity, with the heat of cooking it, its many health benefits are enhanced:

- It is one of the best antioxidants, its preventive and reducing effect has been studied in some diseases such as cancer, especially prostate cancer.
- Also by avoiding cell degeneration, it thus prevents atherosclerosis, and the blindness typical of macular degeneration.
- It also strengthens our immune system and defenses.

There are those who take it as a supplement, but there they will have to see their specific personal case... In general, having good nutritional habits and these good foods... what better for us than enjoying any recipe with a delicious tomato sauce!
