In the summer you probably don't want to turn on the oven so much to make desserts, but you can make other lighter and fresher ones, like this version of blueberry cheesecake, which is actually more of a blueberry cheesemousse due to its smoother texture mainly.

• The ingredients are the following:

     -300 g of cream cheese, at room temperature
     -80 g of erythritol (4 tablespoons) or 5 sachets of stevia
     -50 ml. whipping cream
     -2 teaspoons of vanilla extract
     -2 teaspoons of lemon juice
     -2 pinches of salt (Himalayan rose)
     -5 or 6 sheets of neutral gelatin
     -60 g of blueberries to decorate or red fruits in general
     -Some chocolate cream (like "Nutella").

• Now we go with the preparation:

     -In a bowl, mix the cream cheese with a fork until it is creamy. Add the vanilla extract, lemon, salt, and erythritol. Mix well.

     -Moisturize the neutral gelatin sheets with warm or hot water. Then add it to the bowl.

     -Beat the whipping cream to beat until it takes on volume and then also add it to the bowl with the rest of the ingredients.

     -Now if you want you can add some blueberries or other red fruits, but since the dough is quite liquid, they will remain inside.

     -Leave to cool in the fridge or freezer for a few hours. As soon as it solidifies, you can add other more blueberries on top as a decoration.

     -And if you also want a little chocolate cream, making a drawing for example or more in an abstract way. It can be Nutella or any other like this that I used:

Please note that I am not a cook simply I was just trying to prepare a summer dessert. The recipe may vary depending on the quantity or the type of the ingredients... you can notice, there is not any cookie base because this time I wanted something soft, light and easier to make. But try your own version until you get the sweet dessert you really want, as I did! Cooking is creativity too! Voilà!
