Today we got Homemade buttermilk pancakes topped with fried apples๐๐๐. So this is very simple to make but absolutely delicious. Once again when I cook I do not measure anything. All my cooking is done from eyeballing and feel. I start out peeling and slicing some apples. I melt some butter in a fry pan and the apples go right into the butter on medium heat. When the apples start to get tender I add brown sugar and cinnamon to taste. While the apples are cooking I get started on the pancakes. I take self rising flour and a little baking powder and put it in a large mixing bowl. I'll make a hole in the center and I add some melted butter and eggs. I'll start mixing the eggs and butter into the flour. Next I pour in some buttermilk a little at a time till I get a nice constant pancake batter. You can also use regular milk instead of buttermilk but they will just be pancakes and not buttermilk pancakes. I'll let my pancake batter set for a few minutes while I take the apples off the stove and place them in a bowl so they can cool. Finally just add some butter to a frying pan and fry up the pancakes.
