I have a few articles in the works, but I wanted to get something posted here before they get done. So I am posting a recipe that I use often. It was inspired by a breakfast I would pick up on my way to work some mornings, however it is good any time of day. This recipe can be modified to fit your tastes.
Breakfast Burritos
Ingredients:
1 30 oz. Package shredded potatoes
12 Eggs
1 Onion, chopped
1 1/2 tsp salt
1/8 tsp onion powder
Pinch garlic powder
Pinch Paprika
Cheese, shredded
(What ever type you want, I use mozzarella and cheddar)
Flour Tortillas
(I like to fry these for a bit so they aren’t doughy, but not too long though.)
Instructions:
Fry the potatoes with the onion and seasoning in oil. When the potatoes are cooked then add the eggs. Cook for a few more minutes until the egg is done, then add cheese. Cook until the cheese is melted. I prefer to cook a little longer to brown.
Fill the tortillas with the potato/egg mixture. Top off with any added items your tastebuds enjoy. In my house, we use salsa and onions.
