Most famous of all the vitamins, the water soluble vitamin C was first named the anti-scurvy vitamin, and humans, primates and guinea pigs need this vitamin from an external source, while other animals can synthetize vitamin C from glucose and galactose. Vitamin C has many forms, most of them ascorbates, and the most know vitamers are the ascorbic acid and the dehydroascorbic acid.
Primary food sources of vitamin C are fruits and vegetables, but being water soluble, this vitamin is destroyed by heat. There is almost no vitamin C in grains, beans and dairy, so you need to use fruits and vegetables in the raw form to fully benefit.

As a dietary supplement, the vitamin C has the same bioavailability as the natural sources. The recommended daily dose is up to 90 mg for males and up to 75 mg for females, with an upper limit of 2000 mg.
