Perfect Homemade Keto Mayonnaise
I believe that one of the biggest secrets to being successful on the keto diet is learning how to make great tasting fat based foods. If you think about it, just about anyone can create a decent meal from meats and veggies. We’ve been trained that way; carbs, meats and veggies are easy peasy for us to prepare.
But, since fat has been demonized in our society for so long, most of us don’t know how to prepare it. This is especially true for any emulsified food such as mayonnaise or hollandaise sauce.
So, learning to make an emulsified food like mayonnaise should be a high priority when starting the keto diet.
In this recipe, I show you (in the instructions plus the video) my foolproof method for emulsifying the fat that eventually becomes mayonnaise. Other methods I’ve tried have ended up in a runny mixture on many occasions. But, so far this technique has been flawless.
The whole process takes less than five minutes. Once you’ve mastered making homemade mayonnaise, the door opens up to a slew of new mayonnaise based recipes. Also, the method for making mayonnaise is the same for hollandaise sauce.

Ingredients:
2 Eggs
3/4 Cup of avocado oil
1 Tsp. Lemon juice
1 Tbsp. Dijon mustard
Pinch of salt
Instructions:
First add the two egg yolks to a pint mason jar.
Next, using a hand mixer with a whisk attachment, thoroughly mix the yolks.
Now, drizzle a small amount of avocado oil into the jar and mix on high speed.
Mix for about 10-15 seconds then drizzle a little more oil in.
After a minute or so, you should start getting a thick mixture forming. Keep drizzling the oil in and mixing on high speed until all of the oil has been used.
Finally, add the Dijon mustard, lemon juice and salt then mix on medium speed.
You now have homemade mayonnaise right in your own jar!
Enjoy in salads, on meats, or combine with other ingredients to create dressings and dips.
