Hello!!
Today for dinner we are going to prepare a cold dish. It is wonderful when it is made with a lot of love, you have to take this dish in summer, when it is tomato season. At another time of the year it does not taste as good since the tomatoes are in the greenhouse. Seasonal and fresh ingredients must be used, as fresh as possible.

HISTORY

Its original production technique was by mashing, it consisted of crushing or crushing its ingredients by mechanical grinding. The mashing was carried out in the al-mihrás or mortar that used to be made of wood, stone or copper. This process was very popular in Arab cuisine, and applied to a large number of foods.

This mashing is carried out until achieving a very fine cream texture, made with bread, vinegar, tomatoes, garlic and olive oil.

2.5 kg of red tomatoes.
2 garlic
75 gr of olive oil
20 gr of salt
 250 gr of Bread


 

 

STEP1: Wash and dry the tomatoes

STEP2: Put the tomatoes and garlic in the mixer

STEP7: Chill it in the fridge
