Prospects for the use of insects in the food industry in Russia.
In recent years, there has been a growing interest in the use of insects in the food industry in Russia. Previously, insects were mainly used for the production of animal feed, but now steps are being taken to introduce insect-infused products for human consumption.
Russia has begun testing the production of products with the addition of flour from crickets. The first production lines have been launched in the Moscow Region and Stavropol Territory. It is planned to produce products such as sweets, biscuits and pasta with the addition of cricket flour.
Cricket flour contains up to 75 grams of protein per 100 grams of product, which is significantly higher than regular flour (2-5 grams of protein). In addition, it is rich in iron, calcium and amino acids.
Experts predict that in the next 3-5 years, bars, snacks, and yogurts containing insect-derived proteins may appear on the Russian market. Such products will be positioned as environmentally friendly and protein-rich alternatives to traditional products.
Thus, although the mass presence of insect-infused products on the Russian market is still limited, the trend towards their introduction is gaining momentum. The range of such products is expected to expand in the coming years, which will provide consumers with new sources of protein and nutrients.
