Foodbook #897 Greek semolina halvah


Good morning my friends and happy weekend, happy and sweet like this delicious dessert.
Let’s create this together step by step



2 cups Coarse Semolina
1 cup olive oil
2 cups sugar
5 cups of water
200gr coarsely chopped walnut kernels
200gr pine cones
200gr raisins blonde
1 kg cinnamon
½ κ.γ. grated cloves
1 lemon peel



Boil water, sugar, honey and herbs for 2-3 minutes. Put the oil in a wide saucepan to burn. Add the semolina little by little, stirring constantly with a wooden spoon. Add the walnuts and pine nuts and continue stirring so that it does not burn.

When the semolina takes on a dark blonde color, remove the pan from the heat and add the raisins. Add the syrup and boil it until it is absorbed. Stir and cover with a clean towel for 5 minutes.

Put the halva in a large form or in individual molds. Unmold on a plate, sprinkle with sugar and cinnamon and serve.
