Good morning my friends, a delicious and healthy food soup for today for me and my family

Ingredients

250gr. chickpeas
4 tbsp olive oil
2 medium onions (finely chopped)
1 carrot (chopped)
2 cloves garlic (finely chopped)
1 cube of vegetable broth
2 tbsp tahini
2 bay leaves
Salt, freshly ground pepper

 

Preparation

Soak the chickpeas in water from the previous night, for about 18-24 hours.
The next day, strain them and put them in a pot. Fill with water until the chickpeas are covered and bring to a boil. Boil for about 20 minutes. During this time, remove the foam and then strain it again.
In the same pot, pour the oil, the onion, the carrot and the garlic and fry for 1-2 minutes. Add the chickpeas and sauté for 2 minutes.
Add water in twice the amount of chickpeas, bay leaves and vegetable cube. Bring to a boil and lower the heat. Cover the pot and simmer for 120-150 minutes, depending on the cooking time that our chickpeas need.
Remove from the heat and, while the food is still hot, transfer 1/3 of the broth to a bowl. Add the tahini, the lemon juice, the salt and the pepper to the bowl. Stir until the mixture is homogeneous and return the broth to the pot.
Stir until the sauce sets and serve!
