Good morning my friends and happy week , delicious food with a very nice cooking way . Let’s do this together step by step
Ingredients
1,200 gr. beef from spala, spalomita or spala comb which is very tender, cut into medium pieces (approximately in 12 pieces of 100 gr.)
2 medium onions, cut into small squares or thin slices
3-4 cloves of garlic (vary the amount according to your preferences)
4 large ripe tomatoes, peeled and cut into small squares
1 tbsp. tomato pulp, dissolved in 1 tbsp. teaspoon water or chicken broth
120 ml olive oil
150 ml white, dry wine
1 cut etc. sugar
2 bay leaves
1 cinnamon stick
3-4 pinches of clove powder
6-7 spices
1 pack of spaghetti of your choice size
salt, freshly ground pepper
grated cheese, dry mizithra, or kefalotyri, or parmesan or pecorino
fresh leaves of parsley, or mint, or basil, or thyme, chopped at the last minute for sprinkling
Preparation
Leave the garlic cloves whole with their skin if you want a milder aroma, otherwise clean and chop them. Wash the pieces of meat and "tampon" with kitchen paper to dry completely to saute well.
Heat a large saucepan over high heat without oil. Once it burns very well, add the olive oil, immediately add the pieces of meat and brown them very well on all sides. If the pieces do not fit in one layer in the pot, brown them in two portions. The better they brown, the tastier the meat will become.
Using a pair of tongs, transfer the pieces of meat to a bowl and put the onions, bay leaves, spices and cinnamon in the pot, lower the heat and sauté for 3-4 l, stirring with a spoon until the onions are shiny and wither. Add the garlic and cloves and continue sautéing for 1 l.
Quench with the wine, turn up the heat and leave it for 2 l or until the alcohol evaporates. Add the tomatoes, the diluted pulp, the sugar, salt and pepper and as soon as the mixture boils, put the meat back in the pot together with its broths and as much water as needed to cover the meat by 2/3.
Once the liquid boils strongly, lower the heat so that it boils very gently, half-cover the pot and cook your food for about 1½ hour or until the meat becomes very soft and the sauce sets. Remove the pan from the heat and discard the bay leaves, cinnamon and garlic if whole. [*]
Meanwhile, in another pot, boil your spaghetti in plenty of salted, boiling water according to the instructions on the package. Strain them, put them back in the pot, pour a few spoonfuls of the beef sauce over them and stir.
Distribute the spaghetti and meat with its sauce on the plates, sprinkle with the grated cheese and chopped spice of your choice and serve.
