Good morning my friends, one of my favorite foods for today . I really love spanakorizo.
I will help you create this together
Ingredients
600gr. fresh spinach
2 dried onions
4 spring onions
220gr. yellow or glazed rice
1 leek
500gr. water
1 cube of chicken or vegetables
1/2 fennel (optional)
2 lemons juice and zest
1/3 bunch dill
2 tbsp parsley
Olive oil
Salt Pepper
Preparation
Put olive oil in a wide saucepan and cut the onion and leek into slices and start sautéing over medium to high heat.
Add the chopped fennel if desired and sauté until soft.
Then add the spinach (which we have washed and dried well) in portions until we put it all, hold for a while to add at the end of cooking.
Add the rice, quench with the juice of one lemon. Then we put the cube and the water. Cover with a lid and cook over medium heat for about 20 minutes.
Turn off the heat after tasting the rice and it is almost ready and add the chopped onion fresh, dill, parsley, a little olive oil, the juice from the second lemon and the zest.
Cover again with the lid and let the liquids drain for 10 minutes. Served with feta cheese if you want you can break it in half.
If you want to add the tomato, put it after the spinach and your spinach is ready !!
