Ingredients
1 cup sunflower oil
2 cups coarse semolina
3 cups sugar
4 cups water
Syrup:
2 cinnamon sticks
8-10 cloves
1/4 lemon peel
Preparation
We will need 2 pots, one large and one small. In a large bowl, add water, sugar, cinnamon, cloves and lemon peel. In the small oil and semolina.
Roast the semolina, stirring constantly over medium heat until it gets the color we want.
At the same time, boil the syrup and as soon as it boils well, reduce the heat to medium in the middle and cover the pot for 5 minutes. Then take out the cinnamon cloves and the lemon and let it boil on a medium heat.
When the semolina gets the color we want, transfer it gradually and carefully to the large pot with the syrup. CAUTION because it splashes and we can get a small burn.
When all the material is transferred, stir over medium to high heat until it absorbs all the syrup and comes off the ladle. If we want to put raisins or nuts here we incorporate them. Remove from the heat and cover with a clean towel and close the lid (to get the moisture). Leave it for 20-30 minutes.
Spread evenly on our form and leave it like this until it cools down. Carefully transfer it to our plate and sprinkle with cinnamon.
