Good morning my friends and happy Sunday, today I got for you something different that I believe you will love it and you wanna cook it again and again , let’s see the steps
1 kg of fresh mussels
400 gr. rice (carolina or parboiled)
1 medium chopped onion
2 cloves garlic grated
300 gr. chopped tomatoes
1 teaspoon soup tomato paste
1 teaspoon chopped dill soup
1 teaspoon chopped parsley soup
500 ml vegetable broth
4 teaspoons olive oil soup
Clean the mussels, rinse them and discard whatever is open.
Put them in the pot with ½ cup of water, cover them and leave them for a few minutes on high heat until they open.
Take them out with a slotted spoon and strain the water left in the pot. Keep 1 cup for cooking.
Discard any unopened mussels, clean the rest and keep a few with their shells for serving.
Put the olive oil in the pot and sauté the onion and garlic.
Add the rice, let it sauté for a few minutes and then add the water of the mussels you kept, the vegetable broth, the tomato paste and the chopped tomatoes. Salt, after first tasting the pilaf, because the mussel water is salty.
Boil the pilaf for 15 minutes, stirring occasionally. Then add the boiled mussels, their crumbs and what you kept with the shells, dill and parsley.
Mix the pilaf and serve with freshly ground pepper.
