Good morning my friends, today I got for you an easy dessert with only four ingredients and medium difficult at preparation, you should try this, you will love it

Ingredients

2 kilos of bergamot
1 kg of sugar
3 cups water
juice of 1/2 lemon

Preparation

Wash the bergamots well and grate them on the fine side of the grater. Cut the two lids of each bergamot. And we carve it with 4-5 vertical lines, like we peel an orange. Wrap each piece in a roll and catch it with a toothpick. Do the same with all the bergamots. Put the rolls in plenty of cold water for 8-10 hours. In the meantime, change the water 2-3 times. Then drain.

Place a pot full of water on the fire. Once the water starts to boil, dip the bergamot rolls in. Let them boil for 15 minutes. Meanwhile, place a second pot full of water in another eye of the kitchen. Take out the rolls with a slotted spoon and immerse them in the water of the second pot, which should boil in the meantime. Let them boil for another 15 minutes. Then take them out and leave them in a colander to drain.

Put the sugar and the 3 cups of water in one of the pots. Place on a medium to high heat and let the syrup boil for 1-2 minutes. Remove the toothpicks from the rollers and throw them in the syrup. Let them boil for 20-30 minutes. Towards the end, add the lemon juice. If necessary, skim. Remove from the heat and leave the cake for 4-5 hours to cool completely.

If we see that the syrup has been diluted, we put the dessert to boil again. If the syrup is thick, add a little water and bring the dessert to a boil again. Store it in sterile jars.
