STRAWBERRY CHEESECAKE
In supermarkets and greengrocers these weeks we are seeing beautiful boxes or packages of strawberries... they are in season! For that reason I thought of making a dessert with them, which would be quite healthy, good and simple, because more than a MasterChef I am a bit a MasterCHOF.
I think this is an easy recipe to do and enjoy, and if you choose healthy ingredients that can be a plus to try it, isn't it? So here that version I prepared:
Ingredients:
For the base:
-60 grams of almond flour (or crushed biscuits as in the traditional recipe)
-30 grams of melted butter
For the upper part:
-230 g cream cheese (at room temperature)
-60 g of erythritol (around 2.5 tablespoons, or stevia or sugar or another sweetener you like, maybe you have to correct the quantity according to your sweet taste and which you want to use)
-1 egg
-1 teaspoon of vanilla extract
-1 teaspoon of lemon juice
-1 pinch of salt (Himalayan rose)
-some strawberries to decorate
Preparation:
- Preheat the oven to 180 ° C.
- In a medium bowl, mix the melted butter and almond flour until you get a lumpy batter.
- In a muffin tin* (in my case I did not have that tin so I used two bigger recipients so use what you have), divide the mixture between the portions and press the dough until it is caked on the base. Take the mold to the oven for 5-6 minutes (take care of the power of your oven).
- In a large bowl, beat the cream cheese with a fork until creamy. Add the vanilla extract, lemon, salt, egg, and chosen sweetener. Mix well.
- Divide the filling mixture evenly between the molds and decorate with pieces of strawberries. Bake the mold for 20 minutes or until the surface looks slightly cracked.
- Leave to cool in the fridge or freezer for a few hours or for one night even. Before removing the cheesecakes from the mold, it is advisable to use a knife to loosen them and do it gentle or depending on the recipient you can eat it from there!
The most important thing is the taste, which should remind you of a real cheesecake!!!
