Lemon Cheesecake!

Although I am still not a great cook, sometimes we all want to eat something different, made by us, and of course good. So I keep trying occasionally to prepare some simple but tasty dish, and also healthy, why not?

What can be better than a cheesecake as a dessert! And in summertime something fresh is maybe more desirable... That is why we can do the same recipe just changing some seasonal ingredient. So I have changed the berries and this time I have added lemon.

 

Here the needed ingredients:

  • 70 g of almond flour (for the base).
  • 40 g of melted butter (for the base).
  • 300 g of cream cheese, at room temperature.
  • 80 g of erythritol (4 tablespoons) or 5 sachets of stevia.
  • 60 ml. whipping cream.
  • 2 teaspoons of vanilla extract.
  • Juice of half a lemon or a whole one (it depends on the size).
  • 2 pinches of salt (Himalayan rose).
  • 5 or 6 sheets of neutral gelatin.
  • Lemon zest.
  • Mint leaves (optional).

 

Let's prepare the sweet:

  • First you need to have the butter melted and the almond flour toasted, in a pan until it is golden brown.
  • In a medium bowl, mix the melted butter and almond flour until a lumpy mass. And then extend the base directly in the main mold.
  • In a large bowl, beat the cream cheese with a fork until creamy.
  • Add the vanilla extract, the lemon juice, the salt, and sweetener. Mix well.
  • Beat the whipping cream and when it's whipped, add it to the large bowl.
  • Hydrate the gelatin sheets in warm or hot water, take care it is totally diluted and then add it to the large bowl.
  • You can add here some lemon zest to the dough, but keep some in order to decorate the cake.
  • Beat everything well and put in a mold, let it cool in the fridge for a few hours. When it solidifies, add the desired decoration on top, you can put some lemon zest more and some mint leaves if you really wanted. It's depend on your own taste and creativity!

Depending on the type of mold, you should take care when you try to get it out, because it can be a bit delicate but it doesn't matter at the end...
