Easy Jellof spaghetti with veggies, egg and Dodo (plantain)

I have been making delicious fast food for years and have discovered the joy been driven from making a sweet meal. For me, I am always fulfilled and proud of myself as well as ready to show off my meals.
What you see here is a quick, delicious pasta dish to make for yourself or others when you have no food in the house and it takes only a little of your time.



All you will need is just a box of spaghetti, garlic, eggs, olive oil, and other optional ingredients.


First, we have to get the names of the ingredients used to prepare it.

  • 1 pack of spaghetti
  • Groundnut oil
  • 1 Tomato paste
  • pepper mix
  • seasoning (Maggi cube, Gino curry, salt)
  • onions
  • crayfish
  • Vegetables ( carrot, green beans, and sweet corn).
  • Egg (s)
  • ripe plantains.



  1. Pure in some water in a clean pot and set on a fire (cooking gas or stove, any of your choice). Allow to heat for 5mins then add a pinch of salt to the water. Break your spaghetti into the desired size and pour it into the boiling water. Cover and allow to boil for 5-7mins. After 7mins filter the spaghetti out from the water and set it aside.

  2. Wash and cut your veggies (carrot, green beans, and filter out the water from the sweet corn which is used to preserve it). Set them aside after cutting.

  3. Put a clean pot on the fire and add the Groundnut oil ( just a little). Add your sliced onions and stir for some time. Add in your pepper mix and stir for 2mins. Add your tomato paste and fry for 3mins. Pour in some water and stir. Add your seasonings ( Maggi, Gino curry, and a little salt to taste. Cover and allow to simmer for 2mins.

  4. Pour in your spaghetti and stir in well and taste. If you have gotten your desired taste, pour in your grounded crayfish some sliced onions and cover to cook till the water dries up.

  5. When the water is dried, pour in your veggies (carrot, green beans, and sweet corn) and stir properly. After stirring turn off the fire.

  6. Cut and fry your plantain in a frying pan. Don't let it get burnt.

  7. Boil your fresh egg in a pot for 30mins, after 30mins, crack and peel off the shell.

Serve your Jollof spaghetti on a plate, add in the fried plantain and your boiled egg.
