The brewery is located in the southwest part of the Aizu Basin and uses subterranean water from Mt. Kaze ga Huku uses organically grown Gohyakumangoku, which is grown by members of a local agricultural corporation, "Shizen-Nou-no-Kai". You can enjoy the fruity and pure flavor of the fast brewing method, and the deepness and sharpness of the Yamahai method. Kaze ga Ao Nakadori Yamahai Junmai Nama Shochu (pure rice wine) is a bottle of Junmai sake aged slowly in low temperature storage using Fukushima's Utsukushima Sparkling Yeast. It has the gentle aroma of a pure rice wine, the rich flavor and sourness of a pure rice wine. I would like to try it with cheese.
