Cod With Tomato

Ingredients:

 
-1 Cod Fillet of about 300grs.
-200ml of crushed Tomato.
-50ml Montilla Wine.
-3 garlic cloves.
-1/2 teaspoon of Old Mustard.
-1/2 teaspoon of Dill.
-1/2 teaspoon thyme.
-A little Extra Virgin Olive Oil.

 

Preparation:

 
Put a small splash of Extra Virgin Olive Oil in a small ovenproof dish and put the cod fillet in it skin side down.
 
Peel and slice the garlic cloves. In a bowl, add all the ingredients and mix well with the help of a fork.

 

 
Bath the cod well with the sauce making sure that it is covered in all places so that the cod absorbs all the flavors well.
 
Important!! Do not add any salt ... Cod is usually already salty enough. There is always time to touch up once cooked if necessary.

 

Cover the source with aluminum foil and bake at 200º for half an hour. After this first half hour remove the aluminum foil and continue baking at 160º for another half hour or until the cod is well done.
 
Serve in a deep plate and accompany with french fries or peas.
