Many of us have to stay at home these times, so today we would like to show you a soft-crunchy muffin variation!
`Soft-Crunchy´ is maybe not the most correct definition, but it tells exactly how it tastes!! 😬

So here is the recipe:
3 Parsnips
1 Carrot
1 cup Spelt Flour
3 tbsp Coconut-Oil
2 tbsp Sugar
2 tbsp Honey
3 Eggs
2 tsp baking soda
Lemon zest, Salt

Instructions:
-Cook the Parsnips, after 15min liquidize them
-Mix Coconut -Oil with Sugar and Honey, slowly add the Eggs
- Mix the Flour with Baking Soda, Salt and Lemon Zest
-Rasp the Carrot, stir everything together and give it into the forms
-Bake 15-20 Minutes, 180°C
