The Healthiest Breakfast Ever!

If you know me, you know my last name should be McDonald and not McNeal. Just as one is not all good or all bad, but a mix; so am I. I do enjoy eating my comfort foods, esp at a time like this (COVID-19 Pandemic lockdown from hell) but I also enjoy eating healthy; what an oxymoron right? So check out one of my favorite breakfast meals: Overnight Oatmeal.

Quaker Oats Old Fashion variety
Almond Milk or Water
Apple
Raisins
Walnuts
Cinnamon
Honey
Super Coffee

This meal takes a while but most of the work is done while you sleep! Soak Oats in water or Almond Milk overnight; I used Blue Diamond Almond Breeze. Drain any residual water or milk off. The goal is to have the oats soak it all up so there is no water. This will make the oat soft and flaky not slimy. Next chop up a small apple (if the apple isn't small you will prob only need half the apple), then add about 2 tablespoon full of walnuts (1/4 cup is one serving), 2 scoops of raisins, dashes of cinnamon, and drizzle of honey; I do some extra drizzles (smile). Boom! It's that simple. I also wash mine down with some Super Coffee of the vanilla variety. 

SO umm what's so healthy about that? Well, this bowl of goodness provides the following:
