Components
To prepare the duck: 1 Big white duck, 4 large sour apples (Szara Reneta), vegetable fat, spices, salt, pepper, marjoram. For Silesian dumplings: potatoes, potato flour (starch), egg, salt.


Preparation
Wash the duck in cold water, clean it thoroughly, season with salt, pepper and lots of marjoram. Peel the apples (Szara Reneta), cut them into large pieces and sprinkle with marjoram.


Then, put quite tightly sliced apples inside the duck.


Put the prepared duck into a frying pan for hot fat and fry it thoroughly on both sides. Then put in the oven and bake until tender, occasionally pouring the melted fat over the duck.



Preparation of Silesian dumplings
Boil the potatoes in salted water, then drain and cool. Squeeze through the press or grind with a machine. Add potato flour (starch) to the ground potatoes, add salt to the egg and knead it into a thick mass. We form noodles, and in each noodle we make a small hole for later sauce. Cook by throwing the dumplings into boiling water. The noodles should be ready when they float to the surface of the boiling water (but it's worth checking if it's really pulling out one dumpling for the test).


The way of serving
Serve the duck with Silesian dumplings sprinkled with melted fat. You can also add beetroots. Good dry red wine recommended, in my case Merlot from Moldavian vineyards.
