This is an easy post...
Cajun Chicken Alfredo
So you will need.
Garlic
Onions(white or shallots)
Olive oil
Chicken(thin sliced) raw if possible
White wine(your choice)
Cajun seasoning(something not hot but with flavour)
More Garlic
More Garlic
Maybe
Fuck to much garlic
Parmesan
Real butter
Heavy cream?
Freshly cracked black peppercorns(best pepper flavour)
A single egg yolk.
Sea salt(or just salt)...
The reason for no measurements
Is all dishes come to a point if your making it at home, down to your taste buds.
As I say cooking is trial and error.
Anyways.
Step 1. Hot fucking pan.
2. Olive oil
3. Sliced raw chicken(if precooked add near the end to heat)
4. When chicken is browned add onions and garlic... while stirring to cook them without burning...once garlic is browning and onions are translucent add the white when to deglaze the pan and bring out that flavour.
Once the wine is cooked off(evaporated)
Meaning the alcohol has cooked off and retains the flavour.
Add 2 1inch cubes of butter,
And half to a cup of heavy cream...enough to make a sauce to the amount of what you are cooking..
DO NOT FORGET
PEPPER AND SALT
to taste..I hate adding salt but any dish needs seasoning and lack of seasoning can take something that was supposed to be amazing and make it lack.
So try your sauce as it reduces...adjust with more Cajun or more salt. If by chance you over salt....add honey or plain white sugar. But honestly just don't over salt.... a bit can go along way.
Anyways add your parmesan anytime when you have your butter and cream in.( you will have to stir till the cream n shit is hot to incorporate the parm into the cream.)

Mix in that egg
You mix and add slowly and it goes together very nice.
Simply reduce and add your favorite pasta...I suggest penne it is the best noodle. Take care
