Well here is my best recipe for banana nut muffins. Since we all get bananas and they can go bad. When that happens most of us just throw them away. What I like to do is use them in many recipes instead. But I also like to just use my ripe bananas so they are more delectable. My boyfriend loves these and has eaten 3 of them before I could even cool them. By the time I went to remove them from the muffin pan, mysteriously 3 were missing. I hope your family enjoys them as much as mine. You can tweak this recipe to your liking with or without the nuts added.

What you need:

1 1/2 cups flour
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
3 ripe bananas mashed
1 cup chopped walnuts
1 cup sugar
1 egg beaten
1/3 cup melted butter
1/3 cup brown sugar
2 tbsp flour
1 tsp cinnamon
1 tbsp butter

What to do:

Heat oven to 375 degrees. Line your muffin pan.

In a bowl mix flour, baking powder, baking soda and salt.

In another bowl mix bananas, sugar, egg, butter and walnuts.

Stir banana mix into flour til its combined.

Put into liners.

*To make the crumble. Mix brown sugar and 2 tbsp flour, cinnamon and butter til crumbly.

Sprinkle over top of muffins.

Bake for 25 mins til knife is clean.

Set to side and cool.

Enjoy.
