I used to love the Corn Flakes Honey Joys that you would always see at school fetes... but my mum wouldn't ever make them... I think that they were just jam packed full of sugar. Now, as a father, I recently picked up some Honey Joy Oat bars at the supermarket and I suddenly realised that I could just make these tasty little sugar hits myself!
My older daughter was sick and home from school... so, we figured we would just have a quick little cooking session after lunch so that the little one would have a treat waiting for her after we picked her up from school. Little did I know how easy these little things would be!
Ingredients
100g butter
1/4 cup sugar
Splodge of honey (erring on the slightly more side!)
4 cups of cornflakes (it is more than you think!)
First up, get some cupcake paper cups out in a cupcake tray. Probably easiest to do this at the start instead of racing the quickly setting mixture later on! The ingredient list that I used ended up just filling these 12 cups.
... oh yeah, preheat the oven to about 150 Celcius (I think that that is about 45656/194875948375984 Sun's surface temperature for the Americans... or an iron furnace at 15 paces distance).
Butter, sugar, and honey all in a pot and melt on low heat... stirring constantly until it starts to bubble, froth, and thicken. Then dump the cornflakes in and stir it through the sweet caramel-like mixture. Stir it really well, you want to coat as much of the cornflakes in the sticky stuff as possible, and it can be a little bit tricky if you are being too gentle with the cornflakes!
Quickly spoon out the sticky mixture... use a small spoon as it can be quite difficult to maneuver the sticky flakes with a big spoon. You definitely don't want that stuff all over the place... it is sticky as all hell and a pain in the arse to clean up if it ends up in random places. Or on the floor...
Put the tray in the oven for 10 minutes or until it is nicely browned! Remember that this is a sugar heavy toffee like mixture, so it will go very fast from nicely browned to smoking ruin!
And there you go, sugar bombs that are a nice little afternoon snack! My little one loved it... but she is the one with the crazy sweet tooth (well, me too...). My wife and the older one like them, but they aren't quite as obsessed!
