COD WHIT TOMATE
HISTORY
On this day, I bring you a traditional recipe, you can easily prepare an exquisite dish.
Cod is one of the most consumed fish in Spain.
Cod began to become popular in present-day Portugal in the 10th century, when the Vikings, after several unsuccessful attempts to invade our peninsula, chose to trade with the Lusitanians, exchanging cod for salt. Soon the Portuguese, Basque and Cantabrian fishermen ventured to Scotland, Iceland and even Newfoundland, whose original name is, in fact, 'Terra Nova dos Bacalhaus', a name given to it by our neighbors in the 15th century, after establishing several colonies of sinners.

INGREDIENTS
1 kg Tomato
60 gr of olive oil
10 gr of salt
350gr onion
1 Garlic
150gr pepper
3gr Pepper
white wine 20cl
STEP 1cut the pepper and onion and put a little oil to fry
STEP2 Dry the cod very well and put a little salt

STEP3 Cuts on loins of three fingers approximately wide

STEP4 put the fish in flour and remove the excess flour with the help of a strainer

STEP5 put oil in the pot

STEP6 fry the fish with a high heat, in my case power 5 of 6, just mark the fish since it will cook inside the tomato sauce

TRICK Remove the fish and now with the strong fire put the wine in the pot. By putting a white wine on high power, the bottom of the pot will peel off and leave all the flavor of the fish in the broth.
Add the wine and stir the bottom of the pot. Now let the wine shrink.
STEP7 With the pot clean of excess fish and once the wine is reduced, put the pepper and after 30 seconds the onion and lower to power 4 to make the fried

STEP8 When we have the fried done we put the cod and braise next to the vegetables

STEP9 We have been cooking for 20 minutes, Now we add the tomato sauce, in another recipe I will teach a way to make a tomato sauce and how to preserve it from year to year.

STEP10 stir and lower the heat to power 2, and let cook for 15 minutes
