Baked squash with meat, couscous and cheese

Today I'm sharing another very simple way to deliciously utilize those summer bounties that we sometimes don't know what to do with. I'm talking about squash or zucchini, which are very productive and often have a surplus. Today's dish is baked squash with meat, couscous, and cheese. The recipe is truly simple, but definitely worth trying.

To prepare the dish we need: One large squash, green or yellow, minced pork or pork and beef, onion, butter or vegetable oil, couscous, yellow cheese, spices: salt, pepper, chili pepper, soy sauce.

Next, hollow out the squash to create large cavities for the filling. Don't throw away the flesh, as it will be needed later in the process.

In a pan, fry the previously diced onion until lightly golden.

Add the meat to the fried onion, and when it is lightly fried, add the previously scooped out squash flesh and simmer for a while.

Then add the couscous to the meat, onion and squash pulp and mix thoroughly.

Fill the hollowed-out squashes with the resulting filling, sprinkle with grated cheese, place on parchment paper, and bake in the oven for about 30 minutes. Baking time depends largely on the size of the squash, so adjust it to your own needs.

Serve it straight from the oven. I prefer the yogurt-garlic sauce as a side. Delicious.
