Ashen chanterelle little known very tasty edible mushroom

This very rare species of mushroom, although it does not look impressive, is a rarity in the kitchen. It is somewhat similar to the funnel chanterelle, but it is larger, brighter and the hymenophore is much less veined.

The fungus can be found even in late autumn when the first snowfall appears. It prefers places with a lot of moss and deciduous forests with a predominance of beech trees.

The cap of this mushroom is most often light gray, gray-brown in color and reaches several centimeters in diameter, no more than 5-6. The surface of the cap is wavy, wrinkled, and the edges are curled.

Gills, i.e. hymenophore, resemble a network of veins, gray ribs. The leg is the same color as the hat, the inside is hollow.

The flesh is very elastic and relatively thin. However, in heat treatment it does not lose its properties and the mushroom is still firm. The aroma of a ripe fruiting body is slightly fruity and the taste is mild mushroom.

It is a very tasty edible mushroom, ideal for sauces, soups and marinades.
