Raffaello coconut balls without cooking
As a child I ate raffaello because they are really delicious.
I tried this recipe to create an equally delicious homemade and vegan version.
The recipe for these vegan coconut truffles includes only 4 ingredients and the procedure is really very simple, you will not need a mixer or a food processor, just a bowl to assemble all the ingredients.
Only 4 ingredients
- Almond butter: simple to make at home, made from 100% almonds, it has many uses in the kitchen, especially in the making of biscuits and spoon desserts.
- Coconut flour: obtained from dehydrated and grated coconut pulp naturally rich in fiber, it is often used in the kitchen for the preparation of vegan and raw food desserts.
- Rice Malt: Substitutes refined sugars and honey for a vegan version.
- Vanilla: we will use the pulp inside the berry.
Come and make the coconut balls
- Pour the almond butter into a bowl, add the coconut flour and the rice malt.
- Cut half the pod in order to extract the pulp, add it to the mixture and stir with a spoon.
- Place the bowl in the freezer for 5/7 minutes, when the mixture has cooled a little, form 10 balls with your hands.
- Roll the coconut truffles in the rapé coconut and put them in the refrigerator.
- It can insert an almond inside each ball.
