Yesterday I listened to an interview with an Italian singer who impressed me a lot.

In the interview he told an anecdote, when he was at the beginning of his career, he went to play in a club and there was only one person in the room.
The seat owner offered to refund the ticket and go home.
He performed.
I think he is a great example of professionalism and humility.
He put himself completely at the service of his audience even for one person.
A great proof of tenacity and great passion for his work.
I would like to have this passion and this stubbornness, which in my opinion are exceptional.
The recipe that I propose today is super easy and fast.
They are oatmeal cookies with coconut, almonds and raisins.
These cookies are moderately sweet like most natural sweets and have no added refined sugars.
Advice
If you don't have a vegetable drink at home, you can use water.
If you have just discovered that the almond flour is finished you can use coconut flour for a total of 150gr.

Make a lot of them because they end immediately.
Ingredients
150 gr Oatmeal
50 gr Coconut Flour
50 gr Almond Flour
4 tablespoons of coconut oil
1/2 sachet of natural yeast
2 teaspoons of Psyllium
300 ml of almond or vegetable milk with no added sugar
Preparation
In a bowl, pour the oatmeal, coconut and almond flour. Add the psyllium, baking powder and coconut oil. Pour in the almond milk a little at a time while continuing to mix and finally add the raisins.
Start forming your cookies on a pizza pan lined with parchment paper.
The oat, coconut, almond and raisin cookies bake in a static oven at 160 degrees until golden brown, about 25 minutes.
