I always try to use raw vegetables to safeguard the intake of vitamins and minerals.
Advice
I used spaghetti but you can use any pasta you prefer.
If you have a little more time, you can use a mortar.
Ingredients
320gr of wholemeal spaghetti of ancient grains
60 gr of basil
2 tablespoons of almond butter
10 large pitted olives
extra virgin olive oil
Method
Cook the pasta, in my case spaghetti, in boiling water for the time indicated on the package.
Wash the basil and put the leaves in the glass of the hand blender, add the pitted olives and almond butter, blend until the mixture is smooth and homogeneous.
Drain the pasta, keeping a little of the cooking water.
Season the pasta with the pesto adding q.b. of cooking water if necessary and 1/2 tablespoons of extra virgin olive oil.
