The cookies that I propose today have received their name from my son, they are his favorites, he called them "gem cookies". The raisins in the center reminded him of a gem.

I didn't have the courage to tell him that there are already some cookies called that. Out of respect for those who arrived first, I will confidentially refer to them as "Gemmini". It is strange that these are his favorites, in fact they are by no means the sweetest.

Often people or things are not chosen on the basis of absolute qualities, but on a more or less conscious affinity, on a detail, on an assonance, on a memory.

I have read the Little Prince many times and have cried many times. I remember the passage in which the Little Prince sees the rose garden and realizes that his rose is a rose like many others. But in the same way he realizes that his rose is special because he has received his attention and his care.

I wish you were or became a rose or a gem for someone.

In the meantime, you can enjoy these cookies which are special to us.

Gemmini oatmeal cookies with no added sugar.

They are oatmeal cookies, coconut flour, no added sugar, slightly sweetened with dried apricots. In the center they have a withered grape.

Tips:

I choose dry raisins with no added oils.

You can substitute coconut flour with coconut flakes for a more intense flavor.

As an alternative to natural dried apricots you can always use natural dates or raisins.

If you are in a hurry and do not have time to soak the apricots, you can blend them immediately, the soaking only serves to soften the apricots, thus facilitating the work of the hand blender.

 

 

Ingredients:

150 g of oatmeal

50 g of coconut flour

100 g of dried apricots

3 tablespoons of coconut puree

½ sachet of yeast

250 ml of almond milk or vegetable drink

 

Preparation:

In the glass of the hand blender, pour the almond milk and apricots, leave to soak for 20 minutes, then blend everything.

Melt the coconut puree in a double boiler.

Put the flours in a large bowl, add the yeast, the coconut puree and the apricot sweetener.

Work the mixture until you get a homogeneous mixture.

If you want them to be cute you can use two teaspoons to make small quenelles. If you prefer substance to shape, take some dough and form the cookies on a baking sheet lined with parchment paper.

Time to place the gem !!! On each biscuit put a grain of sultanas. The grapes I take have large berries so I only need one, but if your raisins are particularly small you can add more.

I cook the Gemmini in the oven, in static mode at 160 °, until they reach a golden color.
