Good morning my friends and happy week, let's start this Monday with a very healthy and delicious meal. Let me help you create this at your home

 

Ingredients


For the beans:
Half a kilo of giant beans

For the sauce:
1/4 cup olive oil
1 onion, grated or chopped
1 grated carrot
2 cans of 400g tomato mashed in a blender
1 bunch of chopped parsley or the corresponding celery or both
1 teaspoon salt
freshly ground pepper
1 teaspoon sweet or spicy paprika preferably
1 teaspoon dried oregano
2 cups water or vegetable / chicken broth


Preparation


Soak the giants in plenty of water for at least 12 hours before cooking.
Rinse well and put them in a saucepan with plenty of fresh water to cover at least 2 fingers. Light the eye and as soon as the water starts to boil, scrape off any foams from the surface.
Cover with a lid and lower the temperature so that the water just boils. Boil for one and a half hours, or until soft enough.
Remove the pot from the heat and let them rest for 15 minutes (or more). Fill with cold tap water and rinse at room temperature.
Preheat the oven to 200 ° C on the heating elements.
Drain the beans well and transfer them to a large pan so that they fit in one layer. Add all the ingredients for the sauce except the water / broth and mix well. Add enough water / broth to cover.
Bake in the oven (medium or low grill) for about 1 hour or until they are honeyed with their oil. Bon appetit!
