Good morning my friends, a nice side food for today that I really love it , so let’s do it together

 

Ingredients

1 kg potatoes (peeled and cut into small pieces)
1/3 bunch of chopped parsley
2 medium onions, finely chopped
1 cup grated kefalotyri
a little flour
3 eggs
oil for frying
salt
pepper
oregano


Preparation

First we clean our potatoes and put them in water with a little salt and cut them.

Boil them well in a pot of water.

Once they are ready, let them cool a bit and puree them.

Then beat our eggs in a bowl, add salt and pepper.


Put the puree, onions, parsley, oregano and salt and pepper in a bowl.

Stir a little and add our eggs.

Then, after we have done a good mix and we have a homogeneous mixture, it is time to shape the meatballs.

We shape our potato meatballs and "pass" them through the flour.

On a medium heat, put the oil in a pan and burn them.

Finally, as soon as the potato meatballs are made, let them cool a bit and enjoy them together with a yogurt sauce.

Tips for perfect potato dumplings

After baking, it would be good to put our meatballs in a pan with napkins, so that they absorb the excess oil.
Be careful when frying, they do not need much time to cook and we make sure that they are well cooked and inside.
