Ingredients
1 kg thick spaghetti
2 kilos of ground beef, made of spalomita
2 large onions, finely chopped
4 sec. garlic, finely chopped
3 tbsp. tomato paste
800 gr. tomato, grated
1/2 tbsp. cinnamon, grated
1/2 tbsp. oregano
1/2 tbsp. grated clove
2 bay leaves
400 ml red wine
600 ml of lukewarm water, as long as it takes
20 tbsp. olive oil

For the béchamel:
2lt milk, whole
200 gr. butter
200 gr. flour, g.o.x.
4 yolks
1/2 tbsp. nutmeg, grated
400 gr. parmesan, grated & extra for sprinkling pasta

Preparation

For the minced meat: Heat a deep saucepan over high heat, add the olive oil and cook the minced meat, until it becomes lighter in color.

Once it is ready, remove the minced meat from the pot and pour it into a bowl.

In the same pot, add a little olive oil and add the onion, sauté for 3-4 minutes on medium heat until lightly caramelized, add the garlic, cinnamon and cloves, oregano and cook for 2 minutes. Then add the minced meat, the tomato paste and cook for another 2 minutes.

Quench with the wine and as soon as the alcohol evaporates, add the tomato, water and bay leaf and simmer for 30 minutes until the minced meat caramelizes and its liquids have become a thick sauce. Once the minced meat is ready, add salt and pepper and leave it aside.

For the pasta: Boil the spaghetti in enough salted water, as soon as they are ready, strain them, oil them, sprinkle them with the grated Parmesan and spread them in an oiled rectangular dish measuring 36x29 cm, then add the minced meat on top.

For the béchamel: Put a deep saucepan over medium to high heat, add the butter and mix with a ladle until it melts, add the flour and stir constantly so that the flour does not stick to the saucepan. Slowly add the milk, stirring constantly with the hand wire so that it does not form lumps. Let the béchamel set well and try it to see if it tastes like flour, in which case we continue cooking.

Remove the pan from the heat, add the yolks, nutmeg, salt, pepper, mix gently with a ladle and pour over the minced meat.

Preheat the oven to 200 ° C in air.

Sprinkle with grated Parmesan and bake in a preheated oven at 200 ° C in the air until it turns a nice golden color. Allow to cool for 10 minutes, then cut into pieces and serve.
