Good morning my friends and happy Sunday, a nice and quick meal for this rainy day here in Greece Let’s do it together, step by step

 

Ingredients

700 gr spaghetti
1 kg of ground beef
5 tbsp olive oil
2 onions, finely chopped
2 sk. Garlic
1 tbsp tomato paste
100 ml red wine
600 g tomato cone or peeled
300 ml of water
1 cube of beef or chicken
1 cinnamon stick
2 bay leaves
3-4 grains of allspice
1 tbsp sugar
Chopped parsley
Salt, freshly ground pepper
250 g piece of parmesan or gruyere

 

Preparation


Finely chop the onions and garlic.
Put the olive oil in a wide and low pot (sauté) and sauté the onion over medium heat until it softens for 2-3 minutes and add the garlic.
Turn up the heat and add the minced meat to simmer.
Let it shield well and break into pieces of minced meat with a hand wire, do not stir constantly.
Let it take color, it will take about 7-8 minutes.
Then add the tomato paste, mix well and quench with the wine, let it evaporate well.
Add the tomato, the con case, water, the cube, the spices, the sugar, salt, pepper and cover the pot with the lid, put on medium heat
and simmer for 30-40 minutes.
From time to time we check if water is needed.
Boil our pasta in plenty of salted water for 1 minute less than the package says, strain it, sprinkle with olive oil, stir and put them back in the pot where we boiled them to keep them.
When our minced meat is honeyed with a rich sauce, add the chopped parsley and serve.
Grate cheese on the bottom of the plate, add a little pasta then again cheese, add other pasta and minced meat on top.
Finally, grate another cheese on top and freshly ground pepper.

 

Tip!

I use ground beef from olives or lapa or spala.
The minced meat wants a wide and shallow pot to cook and mash nicely
The minced meat needs a strong fire to be cooked and shielded well otherwise it will boil in the sauté and will not get colored.
Use the hand wire only once to break the minced meat, then mix with a wooden spatula.
You can make a large quantity and store it in the freezer in smaller portions so that you have other times when you do not have time to cook.
