Ingredients
1 kg spinach washed and drained (cut into chunks)
5 finely chopped leeks
10 chives (tender) with their leaves cut into thin slices
1 onion, finely chopped or grated
1 bunch of chopped dill (with its stalks)
1 bunch of chopped parsley (with its stalks)
1 bunch of chopped mint (with its stalks)
1/2 cup trachana
450 g ripe hard feta cheese in coarse chips
200 ml condensed evaporated milk (1 small box)
1/2 cup extra virgin olive oil
2 large eggs
1/4 cup water
salt (optional)
pepper (optional)
Preparation
Take a large bowl and pour in the coarsely chopped spinach.
We salt it and start and press it with your palm until it softens and lowers its juices.
Squeeze it by hand and put it in a colander to strain well for about 15 minutes.
Put the strained spinach in a bowl and add the chopped onions.
Add the dill and mix well.
Crush the feta into small pieces and add it to the mixture.
Try and if necessary, add a little salt.
Add pepper and if you want, add the 2 beaten eggs.
Stir the mixture one last time and leave it in a cool place.
Divide the dough into two balls, one slightly smaller than the other.
We take the big ball, sprinkle it with a smooth surface and open the ball in a sheet of such size that it covers the bottom and the walls of the pan that we will use.
Grease it well and put the leaf inside.
Brush it with a little oil and pour in the spinach mixture.
Fold the leftovers of the bottom sheet to rest on the filling and open the second piece of dough and place it on top of the pan to cover the filling well.
Cut the pie into portions with a sharp knife and bake in the oven at 170 ° C for 45-60 minutes until the leaves are reddish.
Tips:
Instead of dill you can use fennel and instead of dough you can get a ready rustic leaf.
