Good morning my friends, for a very first time I create this and I must say this will be my first option when I will create burgers
Join me at preparation mode
Ingredients
115 gr. milk
60 gr. water
30 gr. butter
300 gr. hard flour
4 gr. dry yeast
10 gr. sugar
30 gr. eggs
5 gr. salt
1 beaten egg
white sesame
Preparation
In a saucepan add the milk, water and butter and heat the mixture until it reaches 30-35 ° C.
Add half the flour, the yeast and the sugar to the bowl of the mixer. Place the hook, turn on the mixer at low speed and leave it until the ingredients are mixed together for about half a minute. Add the mixture with the milk, increase the intensity to medium to high and beat until the ingredients are homogenous and a porridge is created. Reduce to a low heat, add the egg, salt and gradually while kneading, add the remaining flour in portions, leaving each portion to blend well with the rest of the mixture before adding the next. Slightly increase the intensity to medium to high and knead until a homogeneous sticky dough is created for about 5 to 10 minutes.
Cut the dough into pieces of 90 gr. and shape them into balls. Place the balls in a pan with non-stick paper, making sure that they are far enough apart from each other so that they do not stick to the swelling. Spray their surface with oil spray and cover with a film in such a way that it does not stick to the edges of the pan and presses the buns. Leave in a warm place or in the oven at 30-35 ° C until they swell and double their original size.
Brush their surface with egg and optionally sprinkle with sesame seeds. Bake in a preheated oven, in the air at 190 ° C until they reach an internal temperature of 95 ° C, for about 10-12 minutes.
TIP:
* Alternatively instead of sesame we can sprinkle with poppy seeds.
* You can cut the buns smaller or larger depending on the size you want to have in the final result.
* In the middle of the baking process it will be good to turn the baking tray to help the buns get a uniform color.
Stay safe and healthy my friends and take care of your people
My best wishes from Greece
