Let’s do this together step by step

 

Ingredients

500 gr. fresh or frozen okra
4-5 ripe chopped tomatoes or 1 box 400 gr. chopped tomatoes
1 medium onion into thin slices or finely chopped
6 tablespoons chopped parsley
1/8 teaspoon sugar
1/2 cup of olive oil
Salt Pepper

 

Preparation


If the okra is fresh, wash and clean it, removing the stalk with a small sharp knife, along with its hard shell, without removing the whole.

Dip the cut part in salt, put them in a pan and let them stand for 30-40 minutes. Rinse them well with water and a little vinegar or lemon juice. If the okra is frozen, rinse it with water and a little vinegar or lemon juice.
Put the olive oil in a wide and shallow saucepan to heat and lightly sauté the onion. Add the crushed tomatoes or tomatoes, parsley, sugar, pepper, and simmer the sauce for 10 minutes.

Then add the okra and mix lightly, so that the sauce all over them.

Simmer the food in a covered pot for about 20 minutes, until the okra is soft, but without melting. We will not add water except a little, maybe in the end, if the okra has not boiled.
We should not mix okra with a spoon, because they are very sensitive. If they need to be stirred, shake the pot a few times.
