Ingredients

For the cream

1,250 grams. milk
150 grams. sugar
1 vanilla or 1 tbsp. extract
1 cinnamon stick
1 pinch of salt
zest of 1 small lemon
50 grams. fine semolina
50 grams of flour g.o.x.
3 large eggs
50 grams. butter
For the crust

2 tbsp. water
1 large egg
50 grams. sugar
30 grams. butter
For sprinkling

optional cinnamon sugar

 

Preparation


easy and delicious! The traditional milk pie has a cream that is pure velvet. It is a traditional dessert that is passed down from generation to generation. To make the special milk pie, all the ingredients must be at room temperature. Then for the recipe,

Butter and flour a round pan with a diameter of 30cm or an elongated 23 × 35cm.
Mix the flour with the semolina in a bowl and set it aside.
Put 1 liter of milk in a saucepan with a thick base and keep the rest separately.
Add the sugar, cinnamon, zest, vanilla and salt and let it heat over medium heat.
Put the eggs in a bowl and mix them with the whisk.
Add the remaining milk, flour and semolina and continue mixing.
When the ingredients are combined, take a spoonful of the hot milk and stir to heat the egg mixture.
Add more hot milk, always stirring, and pour the diluted mixture into the pot with the milk.
Stir with a whisk for a few minutes until the cream thickens and remove as soon as it boils.
Add the butter to the cream and stir until melted.
Pour the milk pie into the buttered pan.
Flatten the surface by shaking the pan.
For the crust
Beat the egg, milk or water and sugar and pour over the entire surface of the milk pie.
Brush the egg mixture all over its surface.
Spread small pieces of butter all over its surface.
Bake in a preheated oven in the air on the middle grill at 180º for about 45 'until golden brown, slightly puffy and firm.
You can control the milk pie by touching it in the center: once it has stabilized and browned it is ready.
Leave to cool and cut the special milk pie into pieces.
If you put cinnamon sugar, you have to sprinkle it while it is still hot so that it sticks to its surface.

Secrets for milk pie
Allow the milk pie to cool completely and then cut into pieces.
If you see and it quickly gets colored, cover its surface with aluminum foil so that it does not darken too much.
The purer the milk you put in, the fresher the eggs and the more aromatic the butter, the tastier the milk pie will become.
Sprinkle with cinnamon sugar while the milk pie is still hot.
Do not miss the lemon zest. Takes off the recipe.
