Ingredients
For the dough
900 gr. flour for all uses
500 ml of water
4 teaspoons olive oil soup
2 teaspoons soup vinegar
1 teaspoon sweet salt
For oiling the leaves
100 gr. cow butter or margarine, melted
50-80 ml olive oil
For the filling
500 gr. spinach, peeled
salt
grated feta, at will
olive oil
3 eggs, beaten to pour over the filling
To spread the surface
a little butter or margarine, melted
Preparation
Stuffing
For the spinach pie of Petra, we put the spinach in a colander, sprinkle it with salt and rub it with our palms. Let it drain the excess liquids, until the leaves are ready.
Dough
Mix all the ingredients in a bowl.
The resulting dough weighs 1.5 kg and is elastic.
Cover it with a cloth and let it "rest" for half an hour.
After the time has elapsed, we cut the dough into 16 pieces by hand or with a knife and we shape them into balls that fit in our palm.
Use the 12 dough balls at the beginning and leave the remaining 4 aside.
On a floured surface, open each ball (out of 12) with a rolling pin, on a small sheet, about the size of a small plate, and spread each one with the melted butter.
We put 3 sheets (discs), one on top of the other and we stick them with our hand, to join.
Continue the process with the remaining leaves, until we make 4 thick leaves (each consisting of the 3 thinnest leaves).
We open each thick sheet with the rolling pin, in 4 thin sheets, about 40-45 cm in diameter, that is, the diameter of our pan.
Lightly grease the pan and spread the first sheet, on the bottom and on the walls, leaving the edges protruding.
Sprinkle the leaf with a little melted butter or olive oil, sprinkle a little of the feta and spread the second leaf.
Empty the filling, spread it evenly and pour over the eggs.
Mix gently and spread the third sheet, oil it, sprinkle a little feta and cover with the last sheet.
Turn and twist the edges of the sheet that protrude inwards, filling them here and there with pieces of feta, (it is the so-called yacht, ie edge stuffed with cheese).
Grease the surface of the pie and bake our pie in a preheated oven at 230 degrees for 10 minutes and then lower to 200 and bake for another 35-40 minutes. If we see that it takes a lot of color, we cover it with a piece of oil glue.
Secrets
Sprinkle a little coarsely chopped feta on each sheet: 1. for more flavor 2. to let the hot air penetrate the leaves and to bake our pie evenly. With the dough that will be left over: We open leaves and make a few twisted cheese pies, or we cut the leaves into triangles and fill them with whatever we like !!
