Ingredients


2 kg pork leg without bone

150 grams of kefalograviera

150 gr. gouda

4-5 slices of bacon

2 carrots

2 cloves garlic

salt and pepper

Red pepper

oregano

 

For the sauce

5-6 tablespoons mayonnaise

1.2 sour creams

5 tbsp. mustard

2 lemons and 2 oranges for their juice

olive oil

Preparation

We ask the butcher to open the roll. Rinse it well and spread it on a clean bench. Preheat the oven to 200 degrees C. Season the meat well, add the oregano and red pepper and massage with your hand over the entire surface of the pork so that it goes everywhere. Add the chopped garlic cloves. Peel a squash, grate it and slice it in half. Spread the slices of bacon and cut the sticks and spread them alternately on the bacon. Wrap the roll and tie it with string or close it with many toothpicks. Season with salt and pepper and place in a pan or pan, which is closed with foil.

To make the sauce, add all the ingredients to the multi and work until they are homogenous. Pour the rich sauce over the roll and cook for about 2 hours. In one hour we take it out and check it. Take the sauce that is in the hull and pour it on the roll and turn it upside down and pour the sauce on it again. Just before the cooking is completed, we uncover our food to get color, while we turn it to be roasted on all sides, checking that the meat does not dry out. Let it cool a bit, cut it, pour over it the sauce in which it was cooked and serve with potatoes
