Ingredients
For the cake:
250 grams of flour for all uses
250 grams of butter at room temperature
350 grams of sugar
3 tbsp. cognac
3 tbsp. baking powder
5 eggs
200 ml of water
100 grams. cocoa powder
For the syrup:
250 grams of sugar
500 ml of water
75 grams of cocoa powder
For Ghanaz
250 grams of couverture in pieces
250 grams of cream with 35% fat
Preparation
We prepare the cake:
Preheat the oven to 180oC.
In the bucket of a fixed mixer or with a hand mixer, beat the sugar with the butter until fluffy. Add the eggs one by one. Once incorporated with the mixture, add the cocoa. In a separate bowl, mix the baking powder and flour, and gradually add them to the mixture. Add water and brandy. Mix well until the mixture is homogeneous.
Flour and butter a 30 cm rectangular pan. Drain the mixture and flatten it with a spatula. Bake for 35 minutes, until evenly cooked and when we put a knife in the center it comes out clean.
Prepare the syrup:
In a small saucepan, heat water, sugar, cocoa until they boil. Stir well for 2-3 minutes, remove from the heat and let it come to room temperature.
We prepare the ghanaz
In a small saucepan over low heat, heat the cream until the first bubbles appear. Remove the pan from the heat and toss the couverture broken into pieces. Stir gently with mariz until the couverture melts.
Mounting:
Cut the cake into pieces, pour the syrup over it and wait for it to absorb. Wait for 5 minutes and pour the ghana over the chocolate pie. Spread with the mariz. Leave the chocolate pie in the fridge to set before serving.
I really hope you enjoy this
