Ingredients
1 anteria (small intestines)
from goat preferably or lamb
1 lamb liver
sweet lamb
1 large bowl
salt
freshly ground pepper
Preparation
For the grilled kokoretsi, first wash the liver and intestines very well.
Turn the little boys inside out and wash them very well under running water.
Leave them to drain well (optionally squeeze a lemon on the stalk and leave it in the fridge to turn white).
Cut the liver into large pieces, like large bites. The spleen, we always keep it to make a spleen.
Put it in a bowl and season well.
On a small spit we pass 2-3 pieces of liver (alternately liver, lung, heart) and in between we put the sweets - inclination, alternately with pieces of balls that will help the cockerel to keep moisture and not dry out.
After passing all the ingredients on the spit, season with salt and pepper again.
Dip one foot into warm water, pausing between layers to allow them to dry.
Spread it on the cutting board.
Place the spit with the kokoretsi and carefully wrap the bowl around them, covering it completely.
Attach the intestine from one end of the spit to the other and wrap it tightly around the kokoretsi. It is very important to cover all the appetizers in kokoretsi, from the small intestine because any appetizer that protrudes, burns.
Fasten the intestine well at the end.
Bake it on the coals, placing it at the beginning above the fire, at a distance of about 40 cm, to simmer until inside and when it starts to brown, lower it closer to the fire, at a distance of about 15 cm, until it is well browned. . We do not remove the kokoretsi all at once from the fire. Cut appetizers a little at a time to keep the rest warm and to simmer.
