Preparation

For the soutzoukakia

In a large bowl put the minced meat, garlic, eggs, cumin, cinnamon, olive oil, bread, salt and pepper and knead until the minced meat is fluffy.
Put the minced meat in the fridge for 1 hour.
Shape meatballs into a long oval shape and sauté in olive oil until golden brown.
Alternatively, for lighter, we can put the soutzoukaki in the oven, until they turn brown.

For the sauce:
Saute the onion in a pan with olive oil. Add the garlic and sauté for 3-4 minutes, until the onion is soft.
Add the wine, the tomato juice, the sugar, the cumin, the tomato paste, the bay leaf, the olives (optional) and season with salt and pepper.
Boil and then simmer on low heat, until the sauce sets.
For the composition:
Add the soutzoukaki to the sauce and mix gently so as not to break them.
Simmer for 15 minutes, so that the soutzoukaki get the aroma and taste of the tomato.

For the potato salad
Place the potatoes, 2 liters of water and a tablespoon of salt in a large saucepan. Put the pot on high heat to boil for 20 minutes checking the potatoes if they have softened.
At the same time, prepare the dressing by mixing the olive oil, the lemon, the mustard and the oregano.
Strain the potatoes and place them in a bowl.
Finally add the remaining ingredients, mixing very well, being careful not to break the potatoes.
Try and fill with salt and pepper to make it more delicious.
