Good morning my friends, the best option when the weather is cold is a hot soup like this don’t you think ??? Let me help you create this classic and delicious Greek soup
Ingredients
3 cups of bean tea
2 onions, finely chopped
4 sliced carrots
2 chopped celery roots
4 sprigs of celery
1 can of tomato
2 tablespoons tomato paste
1 cup olive oil
salt and pepper
Preparation
First of all, we prefer Greek beans, from mountainous areas, which are of better quality and tastier. You can put any kind of bean, small or large you want. But know that every bean needs a different cooking time.
Also, beans - before we boil it in our bean soup - need soaking. Good soaking from the night we say. That is, we take a pot, throw the beans in and fill it with water, so that it completely covers the beans and has 8-10 cm of water on top. We leave them there all night.
The next day, discard the water and wash the beans well.
Put water in the pot again and make the so-called first boil, without salt. That is, boil them for 10-20 minutes and then discard that water as well. Generally the rule in beans is: boil them for a while in clean water and then cook them in bean soup in another water. If we do not do this, our bean soup will have the known side effects ("bloating" etc)
Once this process is over, put the olive oil in another pot, heat it to a low temperature (do not burn it!) And fry the chopped onion.
Then, add the beans and the rest of the vegetables, along with salt and pepper, to the pot.
Fill with water until all the beans are covered.
Cover the pot and let the bean soup boil on low to medium heat until it boils well. The secret of bean soup, my friends, is slow cooking - as we always have to do if we want good food.
