Ingredients
1/2 kg fresh spinach, cleaned, washed and drained
1/4 kg celery, cleaned, washed and drained
2 bunches of kaukalithres, finely chopped
1 bunch of myrons, finely chopped
1 bunch of parsley, finely chopped
1 bunch of dill, finely chopped
6-7 spring onions, cut into thin slices
2 large leeks, (the white part only) cut first sit in the middle and then in thin slices
2-3 tbsp. chopped mint
380 gr. feta, crushed with your hands or with a fork
3 tbsp. breadcrumbs or trachana or fine semolina
2 eggs, lightly beaten
3/4 cup teaspoon olive oil
Salt Pepper
1 packet of thin crust sheet or crust sheets for pies (thicker)
Preparation
Clean, wash all your herbs and spices well and drain them in a colander. Then chop them in a large bowl, sprinkle with 1 or 2 cutters, etc. salt (depending on how salty your feta is), mix them and leave them aside for about 15 l, to get their liquids out. Meanwhile, preheat your oven to 190 degrees on the heating elements.
Then "squeeze" them slightly with your hands to get enough of their liquids and put them back in a dry bowl. Add the crushed feta cheese, beaten eggs, grated toast or trachana, freshly ground pepper and 2 tbsp. from the olive oil and mix well to incorporate the ingredients well and evenly.
Grease a baking tray with a base dimension of 26 × 38 cm and lay a crust sheet on its base so that it is left over from the walls of the baking tray. Grease it and spread 1 oiled sheet folded on top, so that it covers only the base of the pan. Grease it from above.
Then from above repeat the same process with 1 more oiled whole sheet that protrudes from the walls perpendicular to the previous one and then 1 extra oiled, folded in 2 sheets only at the base of the pan as before.
Pour half of the grass filling on the leaves, spread them evenly and cover them with an oiled crust sheet folded in half. If there is excess on the walls, turn it inwards. Spread the remaining half of the grass filling on top and spread the remaining leaves on top, oiled one by one, alternating the whole with a folded sheet, making sure to finish with a folded sheet.
Sprinkle the last leaf with your hands with a little water and with a sharp knife cut the upper leaves into pieces of your choice. Bake your pie on the lower grill of your preheated oven for about 1 hour or until the leaves are well browned and on the base and the surface of the pie. Take your pie out of the oven, leave it aside to cool slightly and then cut it into pieces and serve.
