Ingredients

6 eggs
1 cup sugar
1 cup semolina finely
1 cup flour
1 vanilla
4 tbsp milk
2 kg baking powder
zest of 1 lemon


syrup

4 cups sugar
4 cups water
1 tbsp fresh butter
peel and juice of 1 lemon
1 vanilla

Preparation

We start with our syrup. It is the first thing to do because cold syrup will fall into a hot dessert. So we boil our ingredients for 4 minutes as the recipe says, but I suggest 7 minutes as standard. Gives better bound syrup. At 4 I think it's a little watery. After boiling, remove until cool.

Turn the oven to 180 up and down. Beat the sugar with the eggs until fluffy very well until they become a nice fluffy cream. We proceed with the zest, the vanilla, and the rest of the ingredients. Beat to combine well and evenly. Pour into the pan and bake for 35 minutes and 3 minutes just down.

Syrup evenly with a ladle until all the syrup is finished. Leave to cool and put it in the fridge. Cool it becomes even more delicious and binds the syrup very nicely

The recipe is for a medium round pan 30cm. For a larger baking tray or square, it means you will double the amount in dessert AND syrup.

The syrup may look great to you if you have never eaten ravani before. Do not make the mistake of adding less. It is just what you need and will keep the ravani moist and fresh for days.

The cup I used was the big one we have for hot chocolate and it has a capacity of 300ml.
